Review

This revised edition of a book first published a decade ago contains
some new recipes from around the world, information on organic potato
seed and heritage potatoes, and addresses of suppliers. The book also
contains information on growing, harvesting, and storing, as well as
tips on buying.

The recipes are grouped into appetizer, breakfast, lunch, dinner,
soups, bread and yeast rolls, and desserts and sweets. Although the
author claims that the recipes have been adjusted to lower fat and
calorie content, many still contain considerable amounts of butter,
cream, or other fats.

Amounts of ingredients are listed in both metric and imperial measures.
Yields and timings are indicated for all recipes, but there are no
nutritional analyses. Some methods are difficult to follow because
multiple steps are not in separate paragraphs.

The book contains some spelling and grammatical errors. Although an
index is provided, items are grouped according to chapter, making a
recipe difficult to find if you wish to prepare it for dinner and it is
presented in a lunch category. Moreover, entries are listed
alphabetically by title, not main ingredient; thus, one must search for
lentil salad, for example, under “s” for spicy.

One may find a few unusual or interesting recipes within these covers,
but The Original, the Incredible Potato is not essential for any
cook’s library.
