Review

This book found a ready audience when it was first published 15 years
ago. Since then, chicken has risen in popularity—not surprisingly,
since it is nutritious, tasty, versatile, economical, and can be easy to
prepare. It blends easily with many fruits, vegetables, and seasonings.

In this updated compilation of chicken recipes, the author has added
recipes adapted from many other countries and omitted some
higher-calorie and higher-fat recipes that no longer seem as appealing
to a more health-conscious society.

The recipes are initially grouped by courses (appetizers, soups and
sandwiches, and salads), but the remainder are grouped by method of
cooking (roast, baked, stir-fried, barbecues, casserole). Both imperial
and metric measurements

are given for ingredients. Although there are no illustrations, all
recipes have a sidebar comment to tantalize the reader. There is a
detailed index, with extensive cross-indexing by ingredients and
chapters. Novice and veteran cooks alike are bound to find an abundance
of pleasing new ideas in this collection of more than 150 chicken
recipes.
