Easy. Fast. Fun. These are the impressions imparted by the authors of
this extensive introduction to cooking on a grill.
Mavia and Ross are well known on the East Coast for their New Brunswick
restaurant, Inn on the Cove, a TV cooking show (Tide’s Table),
newspaper columns, and a previous cookbook. Their latest book provides
the would-be barbeque chef with plenty of practical information about
charcoal, propane, and electric grills. Rotisseries, smokers, even
reflector ovens are included to round out the outdoor cooking tools.
Good stuff, but it is the magnificent recipe collection that steals the
show. The recipes (nearly 200 in all) cover fish, shellfish, beef, lamb,
pork, poultry, vegetables, marinates, glazes and sauces, and a
delightful selection of beverages and desserts. Many of the recipes come
across as innovative ideas, ways to make a special meal without a lot of
fuss. There are lemonade chicken wings, peanut stuffed pork, sweet
potato salad, and dozens of other easy ideas that yield spectacular
results. For the more ambitious, there are directions for barbequing a
whole pig and for making a chocolate cake on the grill.
A crisp design, an index, metric and imperial measures, and a
recipe-per-page layout make the book a pleasure to use.
