Review

Enthusiasm for the subject flows through this bright, energetic recipe
collection. Twelve full-color, full-page photos of mouthwatering maple
dishes draw the browser to the upbeat text and on to sample the many
recipes using maple syrup, maple sugar, maple cream liqueur, or maple
whisky. There are recipes for both the expected (e.g., waffles,
pancakes, cakes, candies, barbecue sauces, ice cream, puddings, and
other traditional uses) and the unexpected (e.g., maple in soups,
salads, chili, cheese casserole, rice, vegetable, and even fish dishes).

Outstanding recipes include the famous Quebec Maple Sugar Pie, Maple
Heaven Carrot Cake, and Maple Gouda Soup. Several informative essays on
maples and their uses in Aboriginal and pioneer culture, easy-to-follow
directions, a clean design, and a functional index all add to the appeal
of this interesting collection.
