Jeffrey Alford and Naomi Duguid, the authors of Flatbread and Flavors,
have traveled to the major rice-eating areas of the world and
experienced firsthand dozens of varieties of rice, along with the wide
array of foods that traditionally accompany them. More than just a
cookbook, Seductions of Rice details the authors’ experiences,
describes rice-growing techniques, explains the differences between the
many kinds of rice, and discusses how to buy and store.

The book, which is abundantly illustrated with magnificent photographs,
both black and white and color, begins with a description of rice and
methods of cooking, and an extensive dictionary. The chapters that
follow deal with rice customs in eight different areas of the world. The
recipe listing is divided into 16 categories, including
“Condiments,” “For Serving When Guests are Younger Than 10 Years
Old,” and “To Please Guests Who Love Exotic Foods.” Metric
measures are not provided in the recipes.

An extensive glossary, index, and bibliography supplement this
beautifully designed book.
