Review

Before settling down to write a cookbook, Jeanelle Mitchell was a flight
attendant. As she traveled about the globe, she collected soup recipes
from foreign restaurants and her fellow flight attendants. The result is
this book featuring more than 100 recipes that range from homegrown
French Canadian Pea Soup to African Peanut Chicken Soup. Despite their
exotic origins, the recipes are notable for their ease of preparation
because Mitchell has adapted them to using ingredients and utensils
found in most Canadian kitchens.

The book starts off with a chapter about “blue chip” stocks, in
which Mitchell explains her secrets for making rich, yet low-fat,
low-sodium stocks. The next chapters divide soups into five categories:
Vegetable, Puréed, Poultry and Meat, Seafood, and Chilled Soups.
Recipes include Asian Tofu and Noodle Soup, Curried Red Lentil and Pasta
Soup, Garlic and Egg Ribbon Soup, Mexican Tortilla Soup, Curried Pumpkin
Soup and Mushrooms, Red Cabbage and Apple Soup, Soupe au Pistou, Tomato
Fennel Soup with Gremolata, Wild Mushroom and Basmati Rice Soup, Down
East Fiddlehead Soup, Creamy Leek and Fennel Soup with Parmesan, Roasted
Sweat Potato Soup with Ginger Crisp, Roasted Asparagus Soup with Goat
Cheese, Hot and Sour Chicken Soup, Hearty Lamb and Bean Soup,
Mulligatawny Soup, Spicy Black Bean Chili Soup, Asian Style Fish Soup,
Newfoundland Seafood Chowder, Mediterranean Seafood Soup with Fresh
Herbs, Cajun-Style Fish Soup, Mango Orange Soup, Chilled Beet Soup, and
Carrot Vichyssoise. Even if you are a complete beginner in the kitchen,
Mitchell’s easy-to-follow instructions take the mystery out of even
the most unusual recipe.

For the Love of Soup is a terrific resource for any cook from the
novice to intermediate level who wishes to expand his or her soup-making
skills.
