Review

This sequel to the 1990 bestseller Eating Light and Loving It! also
features low-fat and low-cholesterol recipes collected by the staff and
patients of the St. Paul’s Hospital Lipid Clinic. Shauna Ratner and
Frances Johnson are both professional dieticians working at the clinic.
The object of both books is to provide “delicious dishes that will
truly be your heart’s delight.” The standard three-ounce meat
serving is in stark contrast to some of the high-protein diets that have
become fads over the past two years. While the authors acknowledge the
other diets, they are sticking to their low-fat, limited-protein dishes
until more data are available.

Mediterranean influences run deep through this volume from appetizers
to dessert, but there are occasional appearances of Asian, Mexican, and
Indian cuisine—even a moose stew recipe for the game lovers. Some of
the offerings include Sun-Dried Tomato Pвté, Artichoke Pesto Dip, Bean
Bruschetta, Teriyaki Chicken Brochettes, Carrot Soup, Miso Vegetable
Soup, Lemon Herb Potatoes, Seafood Lasagna, Banana Pancakes, Cilantro
Rice, Couscous with Mushrooms, Roast Pork Tenderloin with Sour Cherries,
Beer Batter Bread, and Fruit Nachos.

Each recipe is laid out in an easy-to-read format. Nutritional
information is listed on each page. Many recipes come with “timesaver
tips” that reduce preparation or cooking time. You do not need to be
overweight or have heart trouble to enjoy these dishes.
