In her introduction, Jean Paré mentions that she began planning this
cookbook even before her husband was diagnosed with type 2 diabetes. Her
aim was to collect recipes that everyone could enjoy and at the same
time take care of the special needs of a diabetic family member. All
recipes include essential nutritional information about calories, fat
content, carbohydrates, protein, and sodium.
The recipes are organized under “Appetizers & Beverages,” “Breads
& Muffins,” “Breakfast,” “Lunch,” “Main Dishes,” “Side
Dishes,” “Soups,” “Salads,” and “Desserts.” If you are
under the impression that a diabetic’s diet has to be humdrum, this
book will surprise you. Paré’s menu choices can be pretty eclectic.
For example, appetizers include Hummus, Hawaiian Meatballs, Smoked
Salmon Mousse, Black Bean and Corn Salsa, Sushi Layers, and Simple Tuna
Spread. Because many diabetics crave sweets, the desserts seems
especially lavish—Lemon Angel Tower, Almond Cheesecake, Mocha Nut
Meringues, Apple Nut Kuchen, Peach Packages, Piсa Colada Pie,
Strawberry Banana Frozen Yogurt. The recipes are written in simple
step-by-step language that even novice cooks will find easy to follow.
For most recipes, helpful tips, such as ways to lower calories or save
preparation time are provided. Many of the dishes are featured in color
photographs. The spiral binding is great for cooks with only one set of
hands.
Diabetic Cooking is a terrific cookbook for anyone looking to start a
healthier lifestyle.
