Zucchini is a variety of squash with a thin green rind. John Butler is
one of Canada’s master chefs. In this book, Butler shows us just how
versatile zucchini can be in more than 100 tasty recipes.
The cookbook is divided into “Soups and Salads,” “Appetizers and
Side Dishes,” “Entrees,” “Sweet Treats and Baked Goods,” and
“Dips and Spreads.” Each section is well represented with a variety
of recipes that range from traditional to unique. Some of our favorites
include Chocolate-Zucchini Brownies, Zucchini-Pineapple Salsa,
Zucchini-Coconut-Curry Soup, Zucchini-Rolled Sole, and Zucchini
Pastries. There is only one recipe per page, and each is easy to read
with lines separating the ingredients; the directions are in point form.
Imperial and metric measures are located on opposite sides of the
ingredients so as not to confuse the reader. Nutritional data and
“chef notes” are also provided. The “Cooking with Zucchini”
section offers interesting insights, which includes tips about
ingredients and utensils and a nifty page dedicated to cutting zucchini
into a variety of garnishes.
Butler clearly knows what makes a good cookbook; this one is well
arranged, well presented and full of appetizing recipes. For anyone who
grows zucchini or just plain likes the vegetable, this cookbook is a
must!
