Review

This cookbook is an outgrowth of the popular Elegant Entertaining
Cookbook (1986), prepared by Myra Sable and Carol Rosenfeld. Sable and
Colleen Mathieu discarded half the recipes from the earlier book, made
many healthy substitutions, and added 150 new recipes. The results are
truly spectacular, with many highly creative and tasty samplings. Each
recipe has a brief description and serving suggestions, and there are
helpful hints interspersed between recipes. Very few of the recipes go
beyond one page (which sticky-fingered chefs will appreciate), and most
can be prepared in advance.

The lack of information on fat and cholesterol content is surprising,
given the authors’ introduction of healthier contents into
tried-and-true recipes. Also, the book doesn’t lie flat, and the pages
are rather flimsy, allowing food splatters to soak through very quickly.
Caveats aside, this book will delight cooks who are seeking interesting
and original recipes.
