Review

This introduction to vegetarian cooking features more than 80 relatively
easy-to-follow recipes. In addition, each recipe includes a nutritional
analysis of the calories, protein, carbohydrates, and fat content for
each serving. The recipes are sorted by category: appetizers, soups,
salads, soy dishes, mostly veggies, pasta, and desserts. Estimated
preparation time for each dish and suggested safe storage limits are
noted. A glossary of ingredients and helpful tips for those who are less
experienced in vegetarian nutritional planning are included. For some
foods, such as beans, grains, and tofu, there are descriptions of their
varieties, nutritional value, and preparation. A cheerful narrative
provides practical suggestions throughout.

While the book would have been more attractive with photos, it is
well-designed and focuses on nutritious recipes without renouncing
flavor. It is an authoritative text on vegetarian cuisine, likely to win
converts.
