Review

Jean Paré, the author of more than 50 cookbooks, has become a household
name. She wrote Meatless Cooking in response to several inquiries by
health-conscious readers. In the book, she applies her trademark
“quick-and-easy” approach to tofu, yogurt, nuts, bulgur, and a wide
variety of beans and vegetables.

One can sample such cultural delights as Spanish Lentil Pilaf, Avial,
Moussaka, Tabouleh, Guacamole, and Hummus. Many traditional dishes have
been redesigned, such as Protein Burgers, Vegetable Pie, Wieners and
Beans, and Mock Meatballs. Recipes that reflect Paré’s well-known
“home-style cooking” include Veggie Stir Fry, Carrot Casserole,
Chili, Cottage Cheese Squares, and Fruit and Nut Dessert. Calorie, fat,
protein, and fibre content are provided for the recipes, which are
interspersed with photographs.

Meatless Cooking is a timely and welcome addition to Paré’s cookbook
series.
