Many people mistakenly believe that pasta cookery is an exclusively Italian phenomenon. What a pity if in this belief those poor souls neglect to become acquainted with the delights of crispy Jao Tze from China, Korean acorn-starch noodles, Middle Eastern couscous, Jewish kreplach, German spaetzle, Eastern European pirogi, North American egg flakes, Amish potpie — all pasta-based recipes.

This readable book touches upon the shadowy history of pasta but is, naturally, more concerned with the here and now in the average kitchen. The Editors and readers of Harrowsmith Magazine, who together have produced this collection, contend that anyone can produce delicious pasta. With this attractive, ring-bound, fold-back guide in hand, there is all the incentive in the world to try a fascinating array of pastas, appetizers, soups, salads, casseroles, stovetop dishes, and desserts. In addition to clear and careful instructions (measurements in imperial only), the pasta-making section is illustrated with photographs of the procedures involved. The book is fully indexed, and there is an eight-page colour section featuring food that would tempt an archangel.
