Regional cuisine is renowned for its display of local specialties to their very best advantage, and this handsome collection is no exception. British Columbia Heritage Cookbook is, as promised, a treasury of British Columbia treats. Spectacular fish and shellfish dishes abound, though foods of all other kinds are given full treatment as well, under the headings Light Party Food; Brunches, Breads, Buns; Soups and Chowders; Salmon, Fish and Shellfish; Main Meat Dishes; Vegetables; Salads, Lunch and Dinner; Sweet Treats; and With Loving Hands (garnishes). Many of the dishes carry the names of their places of origin or of their contributors. Browsing and sampling one’s way through this attractive collection of regional recipes will be a next-best substitute for visiting the beautiful West Coast province itself. Nicely presented in bold, readable type, with both metric and imperial measurements; some coloured photographs of the dishes described. Indexed and ring-bound for convenient use.
