Review

Carpino made his reputation on Canadian television as an Italian chef who also sang opera passages (he’s a tenor). This is his second book; the first was Italian Gourmet Cooking. The 200 recipes here have all been drawn from his TV shows, and are made with readily available ingredients. Included are notes on techniques and ingredients as well as tips and advice on cooking. Both metric and imperial measurements appear, and there are even wine notes. The recipes, which cover all courses, include fried mozzarella cheese, fava bean soup, mussels with tomatoes, chicken with eggplant and cheese, lots of pasta dishes (lumache with crabmeat sauce), and veal dishes, as well as desserts such as straffoli (neopolitan honey balls). A book for the fans.
