Ken Kostick is a co-host of the popular cooking show What’s for
Dinner. While shooting the show on location in the West Indies, Kostick
and his co-host had the opportunity to discover, sample, and create a
variety of dishes. The result is this unique collection of island
delicacies.
In keeping with Kostick’s belief that readily accessible ingredients
should be used, the easy-to-follow recipes have been tailored
specifically for Canadian kitchens. Each recipe features healthy
ingredients and requires 30 minutes (or less) of preparation time. In
addition to low-fat options, the book offers creative uses for
leftovers.
The varied selection includes soups, sauces and salads, as well as
vegetarian, seafood, and pasta dishes. Kostick also shares his discovery
of restaurant selections (including Chart House Blue Cheese Dressing and
Seafood Black Pizza from Cozumel’s Pizza Rolandi) along with his
childhood “comfort food” (Mexican Chili Pasta and Helen’s Mango
