Review
As indicated in the subtitle, Brad McCrorie has included a soup for
every occasion. McCrorie encourages his readers to use his recipes as a
guide, but to inject their own creativity and tastes into each. Don’t
worry, he has provided useful explanations of key terms and techniques
as well as instructions on how to create various stocks and sauces,
including beurre manié, sauce velouté, and demi-glace. There are
basics like Chicken Noodle Soup and some more exotic varieties such as
Shark with Demi-Glace, Lobster Bisque, Chanterelles with Sun-Dried
Tomatoes, and Drunken Raspberry.
The book may temporarily set some readers off-balance because of its
deliberate lack of organization. The recipes are listed randomly “in
an effort to encourage the reader to browse, discover and experiment.”
The front of the book contains a list of the soups in order of
appearance along with a notation of the soup type: hot, cold, or
meal-in-a-bowl. Readers can check boxes marked “Tried It” or
“Loved It.” For those readers who prefer to be able to find a
specific soup, all the soups are listed alphabetically in the index.
Unfortunately, there are no pictures included in this cookbook.
Soup of the Day is spiral-bound so that it lies flat, making it easy to
use when cooking. With 365 different soups listed, there is more than
enough variety to keep any chef happy. McCrorie honed his soup-making
skills first at his mother’s deli in the St. Lawrence Market and then
at the Great Canadian Soup Company.
