Review

Jean Paré has always had a love of cooking. In 1963, she volunteered to
prepare a school anniversary dinner for more than 1000 people. This
launched a flourishing catering business and many requests for her
recipes. Her first cookbook, 1981’s 150 Delicious Squares, marked the
beginning of her Company’s Coming series of cookbooks, which are
notable for their quick and easy recipes using everyday ingredients.

Paré’s philosophy has always been that great food, lots of laughter,
and a comfortable atmosphere will always produce a successful meal.
Because the main course is the focal point of a meal, one can build on
it to make the meal a casual or a formal one. Most Loved Main Courses
offers more than 80 delicious mealtime ideas, all beautifully
illustrated in large colour photos. The book’s chapters are divided
into beef, seafood, pork and lamb, and poultry. Each recipe is presented
in bold type with easy-to-follow instructions and both imperial and
metric measures. All have per-serving nutrient analyses of calories,
total fat (divided into monounsaturates, poly-unsaturates, and
saturated), cholesterol, carbohydrates, fibre, protein, and sodium. As
well, every recipe has a brief explanatory comment or serving
suggestion.

The recipes included are from many cultures (e.g., Shrimp Mango Curry,
Lemon Grass Pork, Blackened Snapper, Tourtiиre Québécoise) and are
simple to prepare. A complete cross-index and a useful tip index are
provided.
