Review

This book was first issued in 1980 as Janice Murray Gill’s Canadian
Bread Book. Although some of the material has been revised, there is
much here that is dated. The bibliography goes only as far as 1979, and
there is nothing on the newer grains such as spelt or quinoa. Nor does
Gill mention the increase in the use of whole grains, sprouts, durum
flours, and semolina, or the fact that fresh yeast is now more widely
available and can be safely frozen for medium-term storage. Sourdoughs
have also taken off during the past 15 years; the chapter on that
subject could therefore have been enlarged. The pictures look old and
grainy.
