This cookbook proves that “light dining” need not be dull dining.
The recipes run the gamut from appetizers, soups, and sauces through
main dishes to beverages, breads, and desserts. There is even a recipe
for light chocolate truffles (surely a contradiction in terms).
By “light” Paré means low in calories, cholesterol, sodium, and
fat. Each recipe is accompanied by nutritional information on all of
these categories. Although all the recipes are given in both imperial
and metric measures, there is also a handy metric conversion chart for
weights and measures, pans and casseroles, and oven temperatures.
The book is seasoned with “Paré Pointers” (humorous quips such as
“An octopus goes to battle well armed” or “A whooping crane is
really a stork with pneumonia”), which will probably not be
appreciated by all readers.
The recipes are generally easy to follow and quick to prepare, and call
for affordable ingredients. As a professional caterer, the author has
learned how to combine nutrition, flavor, and convenience.
