Review

The subtitle says it all. This cookbook contains recipes that use little
or no salt, sugar, or fat, and that increase the use of fibres, all of
which leads to a reduction in calories. “We are on the threshold of a
new era of food,” says the author, and she goes on to explain how and
why. She discusses in some detail the addition of fibre to our diets and
the elimination, if possible, of salt, sugar, and fats. Flavorings and
seasonings are encouraged. The recipes that follow are interesting,
useful, and tasty. Some chapters are prefaced with informative text on
how to choose and buy the ingredients called for in the recipes. Recipes
for everything from snacks and soup through main dishes to sweets are
included. Written with diabetes in mind, this thoughtful book will be
relished by anyone engaged in the effort to “eat healthy.”
Equivalents (e.g., 1 egg = 3 tbsp = 2 oz = 50 mL), useful hints, and a
bibliography are included.
