Review

Wild rice is a long, dark grain that is high in nutrients, low in
calories, and a good source of fibre. In Canada it grows wild in New
Brunswick, Quebec, Northern Ontario, and Manitoba. Generally considered
a gourmet food and served as a vegetable, wild rice is treated here in
many new and unexpected ways. This booklet of recipes is divided into
five sections: “Brunch, Breakfast and Breads”; “Salads, Sauces and
Soups”; “Vegetables and Pasta Plus”; “Seafood, Poultry, Pork and
Beef”; and “Snacks and Desserts.” Such wild rice confections as
scones, muffins, pancakes and waffles, popped wild rice, and wild rice
pudding sound delicious indeed. Main-course dishes include goose and
gravy casserole, meat loaf, seafood casserole, perogies, and stuffed
zucchini. Wild rice is used in its well-known cooked state as well as in
the more exotic forms of wild rice flour, pasta, and pancake mix.
Delicious and nutritious recipes are provided here for most occasions. A
must for lovers of this distinctively North American food.
